Black-Eyed Pea Dip ~ Paula Deen Inspiration
My father-in-law just told me about a dip that sounds both amazingly yummy & amazingly healthy:
2 big cans black eyed peas
1 big can kernel corn, drained
1 can chopped spicy tomatoes
1 jar chopped pimentos
chop green & red bell pepper, onion, seeded jalapeno
add to taste: red wine & balsamic vinegars, olive & vegetable oil, garlic powder, oregano, dijon mustard, a pinch of sugar, salt & pepper
serve with tortilla chips..best if served cold

ReplyDeleteHi Bonnie, You inspired me with this wonderful bean dip ... Well, I would call it a bean salad. I just made it with things I already had on hand (only had to substitute the kind of beans I used).
